Fermentation is the bedrock of cuisines the world over but we are only beginning to scratch the surface of its benefits to our physical and mental health. Too bad it often seems such a mysterious process. In a world tormented by hurry and nagged by the idea that everything must be quick and instantly gratifying, in can be refreshing to step back and follow a process which is measured in days instead of minutes. It helps if that process is very easy!
